I'd like to have a Hazel rule that will set the "open with" attribute of any text file added to or created in a monitored folder to a certain application. That is, my default app for opening text files on the Mac is BBEdit, but there's a certain folder whose files I always want to open in a different app, without having to configure each file manually individually. Is that doable?

You'd need to use a script for that as there's no built-in action for that. Search around as there is probably one out there that you can adapt.
