Complex folder structures

Has anyone done anything on sorting in folder structures such as below?

I wish to sort into a Folder/sub-folder structure under a different Directory Structure eg:

/Volumes/Media/TV/Flattened/<show> - S<season>E<episode>/<file>
to
/Volumes/Media/TV/TV_Shows/<show>/Season <season>/

could anyone give me some hints on how to proceed?
