I want to process new files but not instantly, after one hour of the date they were added.

Is that how you do it? (https://i.imgur.com/Z48Biz7.png)

I am not really sure, I guess I can wait and see but something tells me I am wrong on my assumptions.

What you have makes it so that it happens after 1am every day. Instead, you want to use "Date added is not in the last 1 hour".
