Hi
Is there any way Hazel can remove a word from a file name?

For example, if the file name was 'My document edit.txt' can Hazel change it to 'My document.txt', regardless of what that last word might be?

I've been trying to get my head around it and decided it couldn't be done but thought I would check here before finally giving up.

You can probably use match patterns for that (search the help). You can use a custom attribute to match everything but the last word, then use that attribute in the rename action.
