Combine multiple PDFs into single document

I have a folder which contains multiple individual PDF files. Once a week I need to combine these into a single PDF. It is easy enough to specify which folder to watch, specify the parameters (day of week etc.) but I am stuck on the rest of it. Seems to me I need to create an Apple Script or similar that will open Adobe, access the menu to combine the PDFs, select the PDFs in question and then combine them. Am I hoping for too much here, or do you think this is possible?

It would have to be either an AppleScript or Automator. If you don't know how to script, then check out Automator as there may be an action there that does what you want.
