Creating Customer Files

Just downloaded the 14 day free trial of Hazel. I've tried to use it before, but before I could figure out if it was going to work for me, I always run out of time. But here's what I need it to do, hopefully an experienced Hazel user can show me an example of how to do it, or if it even can.

Creating a customer file:

for a file for a customer i.e, Joe Smith I always have three kinds of documents saved into a folder "Projects" in Dropbox:
A scanned .pdf titled Smith John 01-01-2015 Project Form (first)
A .pages document titled Smith John 01-01-2015 (second)
A .pdf document titled Smith John 01-01-2015 (third)

Is Hazel able to grab these three files once the third file is created and move them from the "Projects" folder in Dropbox, and create a sub folder in the "Customer" folder also in Dropbox?

I'm not very computer literate, I've never been able to get anything like Automator working for me, but this would be worth paying for every future update ever if I could get this one single task to work properly.

Thanks for any help you can give me.

What is the name of this subfolder you want to create? Depending on that, you should be able to use the "Sort into subfolder" action to do that for you though everything hinges on the specific details.

I can either create a new folder "Smith Joe" or can Hazel create that folder automatically?

If that name is in the file name, then Hazel should be able to create it. Search the help for "match patterns" on how to do this type of thing.
