There is most probably simple way of doing this but at the moment I have a convoluted way of processing TV shows.
I have a rule that takes a movie file and moves it to an alphabetical folder. It makes scrolling using an Apple TV much easier.



However I have had to create a rule for every lettered folder to then sort the file into the relevant series name and season, or create one if there isn’t one.



Is there a way to simplify this or combine the 2?

Try combining the two. You can have two matching conditions with different custom tokens. As long as they both match, then you have access to all the custom tokens you defined.
