I'm really struggling with the whole subfolder thing.

I've set up a rule that if there's a folder named 'Untagged' then it should have a red label attached.

(Watched folder)/Untagged- turns red no problem

Watchedfolder/2025/Untagged
Watchedfolder/2025/test/Untagged

Nothing happens.

I want it so that if a folder appears, at any level within "Watchedfolder" then it is tagged red.

Your image is not coming through. Can you post screenshots of your rules? You can use imgur.com if you don't have your own cloud/sharing service.

I can't work out how to embed that. They used to display img tags on there back when I used a forum like this.

Basically. I want any folder named 'Untagged', no matter how deep in the subfolders, to be tagged red.

Check the manual for subfolders. There's a chapter on the topic. What you have now will tag Untagged folders. The problem is that it will also only descend into folders named Untagged. You need to split those into two separate rules and make sure the rule which does the tagging precedes the other.
