Could someone explain the files and the "logic of the names" located in my Library/Application Support/Hazel folder?

There are many files and I would like to understand their names to determine which ones I might want to select for restore from Time Machine.

You really should not be picking and choosing there. Any folders under Application Support are internal files for their respective apps and mucking around with them is flirting with disaster. You really should be backing up everything under Library.
