I read that Hazel rotates out old log files on a weekly basis and the old ones get thrown away eventually.

That's honestly quite annoying. I find every week these hazel.prev.log file in my bin.
Is there a way to send the prev.log file automatically to a Hazel folder, so that I don't see it every week in the bin?
Or, even better, deactivate this automatic throwing away?

No way to change that now. Is there a reason why you keep watching your trash/bin? Is there a reason why you want to keep the files?
