Check Infinitely Nested Folder Hierarchy for non-OCR'd PDF

Pls be gentle with my novice questions and, yes, I have read the intro section.
The aim is a rule that checks a folder hierarchy for any PDF file that hasn't been OCR'd.
The definition of hasn't, however imperfect, I'm taking as:
Kind - Is - PDF
Contents - do not contain match - abc / Word
Do the following:
Set color label = red
Very simple, works great when I point it at a single folder, and tags PDFs = makes me happy
What I haven't been able to do is to point the rule at a large folder, with an unknown number of sub-folders, and have it work through that
Any tips, please?
