I just discovered the "Other…" condition
Is there a master list of all the valid attributes somewhere I can refer to when I don't have Hazel open?

There's no single list. It's all the Spotlight attributes available on your system. It will vary depending on what apps you have installed. You can get a similar list in the Smart Folder interface.
