I would like to select files that are iPhone Time-Lapse and also slow-mo videos to organize.

I looked into the EXIF and found details there to help. But not sure how to get Hazel to see that metadata:
1. Video Frame Rate (To select slo-mo videos)
2. Com Apple Photos Capture Mode ---(Which shows up as "time-lapse")

How could I possibly get Hazel to see these metadata lines so I can organize my files?

You'll need to use something like exiftool. Search the forums here as there are scripts posted which should give you a start.
