Created simple rules on http://xx.xx.xx.xx/Inputs/Processing/
such that any eps file older than t in http://xx.xx.xx.xx/Inputs/Processing/ would be deleted.

Selecting mounted server via Command+K in Pathfinder just could not get to work.
So tried different tack.
Mounted using Transmit and selected folder. Copied rules to Transmit mounted folder and voila! Works.

Anyone any idea why should work when mounted from from Transmit but not Pathfinder?

Maybe ask the developer of PathFinder. I don't know what it's using to mount the volume. As far as Hazel is concerned, it just has to appear as a filesystem.
